Chicken Parm alla Vodka Subs

Crispy, golden-brown chicken cutlets nestled between layers of spicy vodka sauce, fresh mozzarella, and fragrant basil. This mouthwatering creation is perfected with a garlic-infused broiled crust, resulting in a satisfying Italian-inspired comfort meal.

INGREDIENTS

1 large loaf of bread 
1 lbs chicken breasts
3 eggs
1/3 cup parmesan cheese (grated)
1/3 cup Italian breadcrumbs 
2 tsp garlic powder
2 tsp onion powder
1 tsp Italian seasoning
4oz fresh mozzarella cheese
1 tsp olive oil
3 tbsp vegetable or canola oil
Fresh basil (to garnish)
Salt & pepper (to taste)

VODKA SAUCE
2 tbsp olive oil
1/2 shallot (minced)
3 cloves garlic (minced)
1 tsp red pepper flakes
1/3 cup tomato paste
1 tbsp vodka
1/2 cup heavy cream
2 tsp butter
1/4 cup parmesan cheese (grated)
Salt & pepper (to taste)

DIRECTIONS

STEP 1
VODKA SAUCE: Heat olive oil in a large pan. Add the minced shallots and cook for 3-5 minutes on medium heat, or until translucent and fragrant. Add garlic and red pepper flakes and sauté for 1-2 additional minutes. 

STEP 2
VODKA SAUCE: Add the tomato paste to the pan and mix. Cook for 3-5 minutes, or until the paste has combined with the oil. Add vodka to the pan, stir to combine, and simmer until it is cooked off - for about 3-5 minutes - mixing often. 

STEP 3
VODKA SAUCE: Lastly, add the heavy cream, butter, and parmesan to the pan and stir until the mixture has thickened and cheese is melted. Remove from heat and set aside for Step 9.

STEP 4
CHICKEN CUTLETS: Cut the chicken breasts into thin cutlets. Season with salt and pepper.

STEP 5
CHICKEN CUTLETS: Add the eggs to a shallow bowl and whisk together. In another shallow bowl, combine the following ingredients: Italian breadcrumbs, 1/3 cup grated parmesan cheese, garlic powder, onion powder, Italian seasoning, and salt/pepper.

STEP 6
CHICKEN CUTLETS: Dip the chicken cutlets into the egg mixture, and then into the breadcrumbs mixture, making sure all sides are coated. 

STEP 7
CHICKEN CUTLETS: Heat 3 tbsp vegetable oil in a large frying pan on Medium heat. Add the dredged chicken cutlets to the pan and fry until golden brown, about 3-5 minutes per side. Remove from oil and set aside for Step 9.

STEP 8
Cut the loaf of bread in half and set on top of a baking sheet. Lightly brush olive oil onto both sides of the bread, and sprinkle with garlic powder.

STEP 9
Spoon a generous layer of vodka sauce onto one side of the loaf of bread. Top with a layer of chicken cutlets, another large spoonful of vodka sauce, a layer of fresh mozzarella cheese, and garnish with fresh basil.

STEP 10
Broil in the oven until the cheese is melted and bread turns golden brown - about 5 minutes. Assemble top layer on top of bread, cut into sandwich-sized portions, and serve alongside a Caesar salad or your favorite Italian side dish.
