Chicken Milanese

Tender chicken cutlets coated in a golden, crunchy breadcrumb crust. Served with a squeeze of zesty lemon, the dish offers a delightful blend of succulent chicken and satisfyingly crisp texture, making it a classic Italian favorite.

DIRECTIONS

STEP 1
Marinade: In a small bowl, combine the following ingredients: eggs, 1 tbsp olive oil, minced garlic, 1 tsp Italian seasoning, salt & pepper (to taste). Place chicken cutlets in the egg mixture, cover, and marinate for 30 minutes to 4 hours in the fridge.


STEP 2
In a separate bowl, combine the following ingredients: panko breadcrumbs, grated parmesan cheese, 1 tbsp italian seasoning, garlic powder, onion powder, salt, & pepper. Set aside.


STEP 3
In a large pan, heat 1 cup vegetable oil over medium-high heat until oil is ready for frying.


STEP 4
Remove a chicken cutlet from the egg mixture. Dredge the chicken in the parmesan breadcrumb mixture - pressing down so the crumbs coat all sides of the cutlet. 


STEP 5
Transfer the cutlet to the heated pan and fry for ~5 minutes per side, depending on the thickness of your chicken. Remove from pan and transfer to a paper towel-lined plate. Repeat with the other chicken cutlets.

STEP 6
Plate the chicken with arugula salad, garnish with lemon wedges, and serve with your favorite side dish.
