Chicken Noodle Soup

This creamy chicken noodle soup is a comforting blend of tender chicken, hearty vegetables, and flavorful broth, enhanced with fresh herbs and a touch of spice. A velvety finish adds richness, making it perfect for a cozy meal.
INGREDIENTS
4 cups chicken broth
4 cups vegetable broth
2 cups wide egg noodles
2 cups shredded chicken
1 cup celery (diced)
1 cup carrots (diced)
1/2 yellow onion (diced)
1/4 cup heavy cream
1 tbsp butter
2 cloves garlic (minced)
1 tsp chicken bouillon
1/4 tsp red pepper flakes
1/4 tsp rosemary
1 parmesan rind
Fresh thyme
Salt & pepper (to taste)
DIRECTIONS
STEP 1
In a large pot, melt 1 tbsp butter over medium heat. Add the diced onion, celery, and carrots. Sauté for 5-6 minutes until softened. Add minced garlic and sauté for another 1-2 minutes until fragrant.
STEP 2
Pour in the chicken broth and vegetable broth.
Add the chicken bouillon, red pepper flakes, rosemary, parmesan rind, and fresh thyme sprigs to the pot. Stir and bring the mixture to a gentle boil.
STEP 3
Add the wide egg noodles to the pot.
Reduce heat to a simmer and cook for 8-10 minutes or until the noodles are tender.
STEP 4
Stir in the shredded chicken and heavy cream. Simmer for another 5 minutes, allowing the flavors to meld together.
STEP 5
Remove the parmesan rind and thyme sprigs from the pot. Taste and adjust salt and pepper as needed.
SERVING SUGGESTIONS:
Ladle the soup into bowls and enjoy while hot. Garnish with fresh herbs and/or a sprinkle of fresh Parmesan.
