Spinach & Herb-Stuffed Salmon Pastry

Indulge in this creamy spinach and herb-filled salmon wellington featuring tender salmon fillets wrapped in golden puff pastry, filled with a rich blend of cream cheese, spinach, and fresh herbs. INGREDIENTS

1lbs salmon fillets
2 puff pastry sheets
1 egg
1 tsp seafood seasoning
Salt & pepper (to taste)

FILLING
4oz cream cheese
1/3 cup shredded parmesan
1/4 cup breadcrumbs
4oz spinach
1/2 shallot (finely diced)
3 cloves garlic (minced)
1 1/2 tbsp dill (chopped)
1 tbsp olive oil
1 tbsp butter
Salt & pepper (to taste)

DIRECTIONS

STEP 1
Preheat oven to 425°F (220°C). Remove puff pastry sheets from the freezer and set aside to thaw. Line a baking sheet with parchment paper or a silicone mat.

STEP 2
In a large pan, heat the butter and olive oil over medium heat. Add the diced shallot and minced garlic to the pan and sauté for 3-4 minutes until the onions are softened and translucent. Add the fresh spinach to the pan and sauté for another 3 minutes until the spinach has wilted.

STEP 3
Once the spinach has wilted, add the cream cheese, shredded parmesan, breadcrumbs, dill, salt, and pepper. Stir until the cream cheese has melted and the filling is well combined. Turn the heat to low and set aside.

STEP 4
Season the salmon fillets with seafood seasoning, salt and black pepper. 

STEP 5
Lightly flour your work surface and roll out the thawed puff pastry sheets to ensure they’re large enough to wrap around the salmon. Place a seasoned salmon fillet in the center of each sheet. Top with approximately 1/3 cup of the spinach-cream cheese filling.

STEP 6
Carefully wrap the puff pastry around the salmon and filling, sealing the edges by pressing them together. Use an egg wash (1 beaten egg with 1 tbsp water) to seal the edges and brush the tops of the pastry. Lightly score the top with a sharp knife to create a decorative pattern and allow steam to escape.

STEP 7
Place the puff pastry-wrapped salmon on the prepared baking sheet and sprinkle the tops with sesame seeds, a light dusting of flaky sea salt, and freshly ground black pepper. Bake for 20-25 minutes or until the pastry is golden and puffed.

STEP 8
Remove from the oven and allow the salmon parcels to rest for 5-10 minutes before serving. Garnish with additional fresh dill or lemon wedges. Enjoy!
