Succulent chicken thighs marinated in a zesty blend of lemon, garlic, and herbs, bursting with flavor in every bite. Simple to make and ideal for any occasion, it's a classic dish that never disappoints.
INGREDIENTS
2lbs chicken thighs (skin-on & bone-in)
1 tbsp fresh parsley (for garnish)
MARINADE
1/3 cup avocado oil (sub. any cooking oil)
2 tbsp Greek yogurt
2 lemons (juiced)
4 cloves garlic (minced)
1 tbsp dried parsley
1 1/2 tsp salt
1 tsp garlic salt
1 tsp ground mustard
1/2 tsp black pepper
1 tsp dried oregano
1/2 tsp chicken seasoning
DIRECTIONS
STEP 1
In a large bowl, whisk together the ingredients listed under "marinade" until well combined. Ensure the marinade is smooth and the flavors are balanced - taste and adjust seasoning if necessary.

Add the chicken thighs to the bowl and toss thoroughly to coat the every piece with the marinade. Be sure to gently rub the marinade under the skin of the chicken to enhance flavor.

Cover the bowl and marinate in the fridge for at least 30 minutes. For best results, leave it overnight to allow the flavors to fully develop.

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil to prevent sticking.
