Twice-Baked Boursin Potatoes

Fluffy mashed potatoes blended with rich Boursin cheese, butter, and half & half, then seasoned with salt and pepper. After an initial bake, they're filled back into their skins and baked again to achieve a golden, creamy perfection.

DIRECTIONS

STEP 1
Preheat oven to 400°F. 

STEP 2
Place the potatoes on a lined baking sheet and pierce each potato with a fork (~4 stabs per side). Brush the potatoes all over with olive oil, sprinkle with salt, and bake for about 60 minutes, or until they can be easily pierced with a fork.

STEP 3
Remove potatoes from oven and let them cool for 5 minutes. 

STEP 4
Cut open the tops of the potatoes and scoop out the insides, placing the potato flesh into a large bowl. Set the skins aside for Step 6.

STEP 5
Add the Boursin cheese, egg, half & half, butter, salt, and pepper to the bowl with the potatoes and stir until creamy. 

STEP 6
Spoon the mashed potato mixture back into the potato skins and return them to the oven for 15 minutes. 

STEP 7
Remove the twice-baked potatoes from the oven, garnish with chopped scallions, and serve alongside a juicy steak and roasted asparagus for a mouthwatering meal.

3.5 tbsp butter
1/2 cup half & half
1 bunch scallions (chopped)
2 tsp olive oil
