Fresh Spring Rolls w/ Peanut Sauce

Dive into the vibrant flavors of our fresh and crunchy spring rolls, packed with crisp vegetables, noodles, and aromatic herbs. Paired with a creamy, tangy peanut sauce, these spring rolls make a refreshing and healthy appetizer or light lunch that's perfect for any occasion.

DIRECTIONS

STEP 1
Prepare all of the ingredients for the spring rolls. Ensure the tofu (sub chicken or shrimp) and noodles are cooked, and the vegetables are shaved and/or chopped into the appropriate size.

STEP 2
Fill a deep dish with a 1/2 inch of water. Soak 1 spring roll wrapper in the water for 15-20 seconds. Remove from water and set on a non-stick plate or surface.

STEP 3
Assemble the spring roll, adding a pinch of each ingredient to the center, including the noodles, veggies, protein, and a few leaves of mint and/or basil. 

STEP 4
Roll together the spring roll, tucking the sides of the wrapper around the filling. Set aside and continue assembling the remaining spring rolls.

STEP 5
In a food processor, combine the following ingredients and blend until smooth: sweet red chili sauce, peanut butter, hoisin sauce, soy sauce.

STEP 6
Serve the fresh spring rolls and the peanut dipping sauce as an appetizer or alongside fried rice or peanut noodles for a refreshing light lunch.

1 cup vermicelli rice noodles (cooked)
1 cup carrots (shaved)
1 cup cabbage (shaved)
1 cup cucumber (shaved)
1 cup romaine lettuce (shredded)
1/2 package tofu (sautéed & chopped - sub shrimp or chicken)
Fresh herbs (mint leaves, basil)

PEANUT SAUCE
1/3 cup sweet red chili sauce
3 1/2 tbsp peanut butter
1/4 tsp hoisin sauce
1/4 tsp soy sauce
