Garlic Butter Chicken Skewers

Tender chicken skewers marinated in a rich, flavorful blend of herbs and spices, then air-fried to perfection and finished with a luscious garlic butter glaze. Easy to prepare and perfect for any gathering, this dish is a guaranteed crowd-pleaser.

INGREDIENTS

1lbs chicken breasts (cubed)
Fresh parmesan (for garnish)
Fresh parsley (for garnish)

MARINADE
2 tbsp olive oil
2 tbsp mayonnaise
2 tbsp fresh parmesan (grated)
1 tbsp Montreal chicken seasoning
1 tsp chicken boullion
2 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika

GARLIC BUTTER
1/3 cup unsalted butter (melted)
3 cloves garlic (minced)
1 1/2 tbsp fresh parmesan (grated)
1 tbsp parsley
1 tsp garlic powder
1/2 tsp thyme
Salt & pepper (to taste)

DIRECTIONS

STEP 1
In a large bowl, whisk together the ingredients listed under "marinade" until well combined. Ensure the marinade is smooth and the flavors are balanced - taste and adjust seasoning if necessary. 

STEP 2
Cut the chicken into 1/4" cubes. Add the chicken to the bowl with the marinade, tossing thoroughly to coat every piece.

STEP 3
Cover the bowl with plastic wrap and marinate the chicken in the fridge for at least 20 minutes. For best results and richer flavor, let it marinate overnight to allow the flavors to fully develop and tenderize the chicken.

STEP 4
Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with oil to prevent sticking. 

STEP 5
Thread the marinated chicken onto skewers, with around 8-10 pieces per skewer. Arrange them in the air fryer basket in a single layer, ensuring there's space between skewers for even cooking. Air fry for about 8 minutes or until the chicken reaches an internal temperature of 165°F (75°C). | Note: This method works equally well on the grill or in the oven.

STEP 6
While the chicken is cooking, prepare the garlic butter by whisking together the ingredients under "garlic butter." Set aside for basting.

STEP 7
Once the chicken is done, remove it from the air fryer and generously baste each skewer with the garlic butter, ensuring it coats the pieces well. Return the chicken to the air fryer for an additional 1-2 minutes to let the garlic butter soak in and create a glossy finish.

STEP 8
Remove the chicken skewers from the air fryer and garnish with freshly chopped parsley, a sprinkle of extra Parmesan cheese, and a squeeze of lemon juice for brightness. Serve immediately and enjoy!
