Creamy Cajun Sausage Pasta

INGREDIENTS
1 lbs farfalle (or pasta of your choice)
1 lbs Andouille sausage (sliced)
1 bell pepper (red or orange) (diced)
1/2 shallot (diced)
3 cloves garlic (minced)
1 cup heavy cream
3/4 cup parmesan cheese (shredded)
2 tsp butter (unsalted)
2 tsp olive oil
1 1/2 tbsp Cajun seasoning
1/4 tsp red pepper flakes
Fresh parsley (for garnish)
Salt & pepper (to taste)
DIRECTIONS
STEP 1
In a large pot, bring 4 quarts of water to a boil. Add a pinch of salt and pasta to the pot. Cook according to the package's instructions. Drain pasta once al dente, reserving about 1/4 cup of pasta water. Set pasta and reserved water aside for Step XXX.
STEP 2
Heat the butter and olive oil in a large pan on Medium heat. Add the sausage, salt, pepper, and 1/2 tbsp of Cajun seasoning, and sauté for 5 minutes, or until sausage has browned. Transfer sausage to a bowl and set aside for Step 5.
STEP 3
Add the minced shallots and diced bell peppers and cook for 5 minutes on medium heat. Add the minced garlic and red pepper flakes and sauté for 1-2 additional minutes. Transfer to a bowl and set aside for Step 5.
STEP 4
Add the heavy cream and 1 tbsp Cajun seasoning to the pan and simmer for 3-5 minutes on Medium heat. Slowly add the shredded parmesan cheese and stir until melted. Add the reserved pasta water to the sauce as needed, about 1 tbsp at a time, until it reaches your desired consistency.
STEP 5
Add the pasta, sausage, and vegetable mixture back to the pan and toss to evenly coat in the creamy Cajun sauce. Remove from heat, garnish with grated parmesan cheese and fresh parsley, and serve with your favorite Cajun side dish.
