Creamy Lemon & Garlic Orzo

Creamy orzo simmered in a fragrant broth, paired with lemon, fresh spinach, and tangy Boursin cheese - creating a rich, indulgent dish. With its velvety texture and vibrant flavors, it’s the perfect complement to any meal or a satisfying stand-alone option.
INGREDIENTS
1 1/2 cups orzo (uncooked)
2 1/2 cups chicken broth
1/2 yellow onion (diced)
3 cloves garlic (minced)
3 tbsp Garlic & Herb Boursin cheese
1 cup spinach
2 tbsp butter
1 tbsp olive oil
1/2 lemon (juiced)
Fresh parsley (for garnish)
Salt & pepper (to taste)
DIRECTIONS
STEP 1
Heat the chicken broth in a small pot on Low heat.
STEP 2
In a separate pan, heat the unsalted butter and olive oil over Medium heat. Add the diced onions and sauté for 3-5 minutes until the onions are soft and translucent, stirring occasionally.
STEP 3
Add the orzo and minced garlic to the pan. Cook for 3 minutes, stirring often to toast the orzo slightly. Season with salt and pepper, to taste.
STEP 4
Add the warm chicken broth to the pan with the orzo. Cook for 10-15 minutes on Medium-Low heat, until the orzo is tender and creamy. Add the spinach in the last 2-3 minutes, stirring until wilted.
STEP 5
Reduce heat to Low. Stir in the Boursin cheese and fresh lemon juice. Add a zest of half a lemon for extra brightness. Stir until the cheese is fully melted and the orzo is creamy.
STEP 6
Remove the orzo from the heat. Garnish with freshly chopped parsley and a drizzle of extra virgin olive oil for added richness. Serve alongside baked chicken thighs or your favorite dinner entrée.
