Chicken Shawarma

Succulent marinated chicken, bursting with aromatic Middle Eastern spices, is roasted to perfection and then thinly sliced. Serve it on warm pita or over fragrant rice with feta, red onions, cucumbers, and creamy hummus.

INGREDIENTS

2lbs chicken thighs (boneless & skinless)
3 tbsp olive oil
1 cup Greek yogurt
2 tbsp lemon juice
2 cloves garlic (minced)

SEASONINGS
1 tbsp cumin
2 tsp cardamom
2 tsp smoked paprika
1 tsp cayenne pepper
1 tsp turmeric 
1 1/2 tsp salt
1/2 tsp pepper

DIRECTIONS

STEP 1
In a large bowl, combine the following ingredients to make the marinade for the chicken: Greek yogurt, olive oil, lemon juice, minced garlic, cumin, and the seasonings.

STEP 2
Add the chicken thighs to the bowl and mix well to coat the meat. Cover and marinate in fridge for at least 30 minutes (or overnight).

STEP 3
Preheat oven to 400°F. 

STEP 4
Place marinated chicken on a baking sheet. Bake in oven for 25-30 minutes, or until chicken is cooked through. 

STEP 5
Remove chicken from oven and set aside to rest for 5 minutes. Slice into thin pieces and serve on a pita or on top of rice with feta, red onions, cucumbers, and hummus.
