Traditional Spanish Rice

This zesty Spanish rice blends tender grains with a burst of aromatic spices and tangy tomato for a truly mouthwatering side dish. It's the perfect companion to cheesy chicken enchiladas or any Mexican feast, bringing a lively, flavorful kick to your plate!

INGREDIENTS

1 cup rice (uncooked)
1 1/2 cups chicken broth
1/2 cup tomato sauce
1/2 yellow onion (diced)
2 cloves garlic (minced)
1 tbsp butter (unsalted)
1 tbsp olive oil
1/2 tsp cumin
1/4 tsp garlic powder
1 dash cayenne pepper
Fresh cilantro (for garnish)
Salt & pepper (to taste)

DIRECTIONS

STEP 1
Heat the butter and olive oil in a pot over Medium heat. Add the diced onions and sauté for 3-5 minutes until the onions are soft and translucent, stirring occasionally. 

STEP 2
Add the rice and minced garlic to the pot. Cook for 3 minutes, stirring often to lightly toast the rice and enhance the nutty flavor. Season with salt and ground black pepper, to taste.

STEP 3
Add the chicken broth, tomato sauce,  ground cumin, garlic powder, and cayenne pepper to the pot. Mix well, bring to a simmer, then cover and reduce heat to Low.

STEP 4
Simmer for 25 minutes, or until the rice is tender and has absorbed all the liquid. Avoid stirring during this time to prevent the rice from becoming mushy.

STEP 5
Remove the pot from heat. Let it sit, covered, for an additional 5 minutes to allow the flavors to meld. Fluff the rice with a fork.

STEP 6
Garnish with freshly chopped cilantro and serve alongside cheesy chicken enchiladas or your favorite Mexican dinner entrée. For a finishing touch, add a squeeze of fresh lime juice before serving.
